I believe in Poland you only pay tax on profits that are withdrawn from the company. If you reinvest those profits back into the company within the same tax year then that is not considered a profit and therefore you pay 0% tax.

You don't. You need to reinvest into the company to keep it "tax free". If you decide you pay yourself that is considered a profit and you must pay tax on amount.
Sooner or later you will want to take out some money from the company and when you do, you will be taxed so it shouldn't be considered an offshore jurisdiction by any means.

It looks like you talk about Estonia. Poland has regular tax system with corporate income tax+ VAT if you trade within EU
 
To be honest I see absolutely nothing interesting (from OCT point of view) in Poland or Estonia.
Estonian e-residency can help you to reduce bureaucracy but in 99 % of cases it won't help you with your tax situation.
