Hi. I'm currently working on a crypto project which will be regulated in the EU. Could you guys point me to some trusted EU based payment processor who work with regulated crypto businesses?

You may want to check out Simplex, which is the most used in your industry.
Advcash provides CC processing for crypto businesses. Explain to them in details what are you going to build.
Otherwise you may try with CCbill, Instabill, Epoch, Paylike, Emerchantpay and Directpaynet.
