Which of these non EU countries are good long term?

Let me add Egypt as one of the most underrated countries on Planet Earth. If you do it well prepared, it can even be tax efficient.
how would you do that?

Norway is stable and easy to move to if you live in the EU

NATO nation, on the route of Russian nuclear subs. Bad weather. And one of the most socialist country on the planet.
And they will not come up with a system like the Philippines (= foreign sources income tax free for resident aliens) since the EU does not accept that.
I wrote the same thing a couple of months ago. Georgia is looking for EUSSR financial aids, the trade off is to dump the current tax system.

how difficult is it to relocate to Egypt if that would be a consideration?
It depends on your passport, investment and where in Egypt you want to relocate.

Easiest: Invest in Egyptian real estate. By far the best place for that is The New Administrative Capital. The developer will help to solve the ubiquitous bureaucracy. Minimum USD 100k investment will give you a one-year visa, for USD 200k you get a visa for a period of three years, for USD 400k this can extend to a five year period.
All of the aforementioned visas are renewable for the same period as long as you are still the owner of the orginal property.
