I have gathered the below list from the web and was wondering if these fall under high risk or if they are main stream so Stripe, PayPal and 2Co (only to mention the biggest payment processors) can be used?

There are many of these categories on the market, and they are also popular products at present, but more means more competition.
If you want to do it, unless your price is competitive enough or the style is relatively novel, if not,you still have to consider some products with more special categories.
