I can't think of any logical reason why you should set up in Spain or Eastern Europe.
You just want a company for your imprint, for that a UK/US company is absolutely sufficient.
There are also various imprint providers that provide you with a summonable address.

you probably won't find anything cheaper than UK, Cyprus you can budget several thousand euros.
