Some countries offer citizenship to anyone born there, regardless if the parents are citizens or even have a residence permit in that country, and I am wondering if it would be possible to obtain a residence permit easily by having ones children born in any of those countries offering it?

There are many countries in the Caribbean with birthright citizenship, such as Sant Kitts and Nevis, Saint Vincent and the Grenadines, Grenada, Dominica, Antigua and Barbuda and Barbados. Those countries have investments programs to obtain citizenship that that cost a lot.

Actually, a Mexican passport is very high quality and residency is very easy, even without a child born there.

The Mexican Constitution states that Mexican nationals by birth are: people born in Mexican territory regardless of parents' nationality or immigration status in Mexico
