Question Recommend customer privacy respecting processor?

I like privacy much and wish to preserve my customer privacy and not sell data to others or keep little data as possible about them. I will sell towels and desk covers in Europe and I am Europe citizen so it is idea and not shady so please do not laugh. What is good processor that will not attach my customer privacy? Profits guess are below 1000 euro in month.

All processors based in EU have to comply with GDPR. But they all also have to comply with lawful requests for information and store certain data.

Many processors, including big processors like Stripe and Adyen, don't require customer's address in some cases (may vary depending on the business), in which case customers only need to provide card information.
