I am currently running an offshore hosting business that generates a few thousand euros a month in profit.

Its not registered yet as a company. Due to the nature of my business, i want a jurisdiction with maximum privacy - Seychelles for example.
All payments are accepted in cryptocurrency, no bank is needed. I myself am based in the Netherlands.

What are the disadvantages of this? Since i am based in the Netherlands, does this not mean that i am liable for tax and VAT in the Netherlands?

How does one solve this issue?

Your final set up would determine your tax position. The fact that you will be dealing only in crypto may provide for some planning opportunities as well as deferrement of potential taxation. There are wwys to build this, but you will have to consider your local tax rules, including any CFC rules and other anti - avoidance rules. Due to low profits, your risk profile is low though.
