COMPANY TYPE: Foreign owned "Single-member" LLC (disregarded entity)
USA RESIDENT: NO. I am an Italian citizen currently living in Thailand.
WLL EVER GO TO THE US: No... I will always work outside the US.
OFFICE IN THE USA: No
No. OF EMPLOYEES: 0

TYPE OF INCOMES: Selling digital goods and digital ads

Income details:
a) In-app-purchases and subscriptions on "AppStore" and "PlayStore".
b) Ads spaces through Admob (Admob is a digital advertising circuit similar to AdSense. The only difference is that they publish ads on mobile-apps).

Are "a" and "b" considered ECI (effectively connected income)? In other words, will they be considered "US source income" and therefore will need to be taxed even if I put no feet in the US?

My thoughts:
- I assume they are not considered US source as they are not physical goods and I will never go to the US even for vacation.
- Maybe the IRS will consider them as US source because even though I'm not performing any work in the US, I using App Store and Google Play as service and these companies (and their servers) are both located in the US

It is depend on the Google entity Pays you.

If you are Talking USA LLC. than Google USA entity Pays you that's means USA source income and It will be Taxed .

My company was registered in the US and I believe I will be paid from US based companies (Google LLC and Apple INC.). But the point is that it's not physical goods, no inventory... it's only digital goods. And I am not a US citizen as well as I will never go to the US

As long as you do not perform any work while physically in the US your income should not be considered as ECI. Lots of people using US LLCs and work with USA companies like Stripe, Amazon etc without paying US taxes. Check the link below:
