Hello. For example, I'm going to pay online with my debit card, the merchant asks me ONLY numbers, date and cvc. Can merchant see my full name? Processing is through STRIPE

No, there is no way to extract any personal information from an online card transaction.

The only "exception" to this is AVS (Address Verification System), which is only available for some cards issued in US, Canada, and UK where a very limited set of personal details can be matched but not extracted. AVS is typically used to verify that the zip code or street number on record with the credit card company match what the buyer stated as Billing Address.
